Phố Hàng Bồ.
Our grandmother Bà Lan cooked phở on a corner of Hàng Bồ for over thirty years. Same pot every morning. Same charred ginger. Same queue by half eleven.
We opened Phở Hanoi on Frith Street in 2019. The recipe hasn't changed. The broth still simmers for sixteen hours. The noodles are still pulled by hand in the back kitchen each morning.
Just us, the family, a kettle of broth and a queue of hungry Soho. That's the whole thing.
